Food: Chinese and French cooking, according to the French and Chinese, are the best and the most famous in the world. Such a statement wouldn't go down well in Italy and might well affront a whole host of other gastronomically proud nations around the globe. And rightly so, yet even the most stubborn of them would be hard pressed not to admit that in terms of variety Chinese cooking outstrips them all.
Split for convenience into four main styles; Cantonese, Mandarin, Shanghainese and Sichuanese, Chinese food is actually as refracted and localized as the countries thousands of linguistic dialects. For basic reference however the dividing characteristics between them are as follows:
Cantonese food or Guangdong food is typically steamed, boiled or stir-fried. It is a very healthy food since it uses minimum of oil. The main ingredients of this type of Chinese food are seafood, pork, chicken and vegetables, but could include almost anything. You need white rice to accompany the meal to make it complete unless it is a special banquet. It is said, "the Cantonese eat every thing that flies except planes, every thing on the ground except cars, and every thing that is in water except boats." In Hong Kong, you will find all the cuisines of China pretty much, but Cantonese cooking predominates. In the morning you could have Dim Sum for breakfast and Beijing Duck for dinner.
Mandarin food harks from northern China and Beijing, in Hebei province, can perhaps be pinpointed as its home. Predominantly wheat based, including numerous dumplings, steamed buns and varieties of noodles it tends to be heavy, not light on oil and often fried, stewed or braised. Vinegar and garlic are used lavishly yet the food can only really be described as mild in taste.
Sichuan food is famous for its hot spicy "Tongue Numbing" dishes. Their uniquely hot, pungent flavor is created by a mixture of spices and condiments, including red hot peppers, garlic and ginger in the ingredients.
Shanghai cuisine, known as Hu Cai among the Chinese, is the youngest of the ten major cuisine in China, with a history of more than 400 years. Traditionally it was called Benbang cuisine, originated in Ming and Qing years. Good at pickling in wine and cooking methods like baking, stewing, teaming, deep-frying, they usually look red and shiny. In the later part of 19th century after Shanghai became a major domestic and international trading port, Benbang dishes underwent some substantial changes by adopting certain merits of other cuisine. It formed a complex flavor structure, cooking style and technique norms. It stresses using condiments and keeping the original flavors of the materials and has features of being fresh, smooth and crispy.
